Leviticus 27:33 -- “He shall not inquire whether it is good or bad, nor shall he exchange it; and if he exchanges it at all, then both it and the one exchanged for it shall be holy; it shall not be redeemed.”

According to the Torah, the law regarding the tithe of cattle applies whether the Temple is in existence or not. The sages, however, ruled that now there is no Sanctuary, the tithe of cattle should not be set aside, since one might eat of its flesh if the beast had not had a blemish, in which case one would be liable to extinction for having slaughtered it outside the Sanctuary Court.*
